Diary of a Vegan Dinner Party.

First of all, I would like to thank all the lovelies who wished me well after having my wisdom teeth removed on Monday. It's so nice to know people all over the world are connected through amazing vegan food! It literally fills my heart with jubilance. I am happy to report that I am recovering quickly! I haven't taken any vicadin since yesterday around 4, and I am feeling just fine, a bit sore, but nothing I can't handle! I even made some yummy Peanut Butter Chocolate Chip Cookies last night, which will be appearing in the next couple of days.

On another note, I am presenting my blog to my class on Monday March 10th. I am really excited and a bit nervous. I have put a lot of work into my blog, but it doesn't really feel like work because I love doing it so much. I just hope I have enough time in my presentation to express all that I want to say about my blog and the community of bloggers that I have met.

Last Friday night before J's show (he's in a hip-hop/jammish band, and he sings), my lovely girlfriends and I finally got it together (after weeks of not) to have a dinner party. It was so nice to see all the girls and my friend Camina brought her vegan friend from home (California), Kalela. We had so much fun! All the food was vegan, even the amazing desserts from Sweet Life. I don't have pictures, but Carrie made a gigantic salad with avocados, tomatoes, cucumbers, hummus, carrots and baked tofu that was so delicious, Lin made stuffed mushrooms that were itsy bitsy bite sized treats, and Sammi brought a bowl of green grapes and strawberries that we munched on during our pre-dinner champagne toast!

I made the Creamiest Vegan Mac n' Cheez EVER from Yeah, That "Vegan" Shit. I added some spinach before baking for some added color and nutrients. Everyone loved it including moi! :o)



Camina and Kalela made a yam and apple bake that was fabulous with spicy cinnamon sprinkled on top. The tenderness of the apples and the yams were perfection.



And Lydia outdid us all and brought a selection of desserts that we managed to devour in ohhhhh 7 minutes. Of particular liking was a slice of Banana Cream Cake. Sooooo delicious, definitely the group fav along with the Cheesecake of course. All in all it was an AMAZING dinner.





Afterward we thought it would help with our digestion to take some shots of tequila before heading off to the concert. Ehhhh, I don't know if they really helped with digestion, but they definitely helped with my hangover the next morning. I LOVE my friends!!!

Glad to hear the wisdom teeth didn't bother you too much, and you made time to bake too! Pretty cool.

That's really neat that you are using your blog for a class presentation.

Ooooh, a vegan dinner party, how fun! Ok, I am a fruitaholic and a yam/sweet potato freak, that yam and apple bake is awesome! Did she just bake them with cinnamon? This is something I must try.

And those cakes, I am jealous!

hi ali!! this is your long lost friend kate elliott. i saw your blog from facebook and i look at it all the time!!! haha i just love you so much, and all your cookings and comments are so great. the pictures of the desserts always make my mouth water. i wish i could come up there to oregon and have some vegan fun with you! ive got some interesting recipes up my sleeve. we would have such a great time! ill see what i can do...will you be living there this summer??

I am so glad you are feeling okay after getting your wisdom teeth out! That dinner party looks fabulous, and your Mac & Cheese looks like it turned out great!! I LOVE that stuff. Yum yum yum.

As for moving, thank you for the well-wishes! :) As you can probably tell by my post, I have a lot of questions & am pretty freaked out... But in a good, exciting way. Mostly I'm just stressed about finding a job because I really have no idea what I want to do still... For the last 8 months I have been working with a project management company that hires technicians to install security cameras, cash registers, computers, etc. for retail stores... It's my first job out of college, so I'm happy for the experience, but also ready to move onto something more exciting. I don't know what, though!! It's frustrating.

Nick & I are lucky when it comes to moving our things, though... My mom & I already planned on having a big garage sale at the end of May, so I am going to get rid of ALL my shit that I don't want anymore. And right now I live at home, so I don't have a ton of furniture to move... That part should go okay, but it's nerve-wracking trying to figure out all the little details. I'm just going to keep planning, and hopefully that will put my mind at ease?

I'm long-winded.

peanut butter chocolate chip cookies! ooh, ahh! now that you mentioned it, i've only had that kind of cookie before made by the alternative baking company (all vegan!). it's a good one.

wisdom teeth removal is such a painful experience that i would not wish on anyone! i sure do hope you're recovering.

i am so jealous of your vegan dinner party! i wish i knew some vegans in person to do that with. everything you pictured looks fabulous, and it makes me want to delve even further into the world of vegan mac 'n' cheese and try some other recipes for it!

That Mac and Cheese looks crazy ridiculous delicious!! And the cookies look pretty awesome too--what a nice affair! And I am not even going to start on the cakes...yum.
